  1. In a large bowl, whisk together all wet ingredients until combined and smooth K

  1. In a separate bowl, whisk all dry ingredients K

  2. Pour the wet ingredients and fold everything together until just combined. Do not overmix K

  3. Add carrots and stir until combined K

  4. You can also add nuts and/or raisins, stir them in at this time as well

  5. Preheat oven to 180°C P

  6. Pour the batter into the cupcake liners until 3/4 full K

  7. Bake for 18 - 20 minutes P
