Remove and discard center ribs and stems from kale leaves. Tear kale leaves into bite-sized pieces. (P and K)
Combine kale, half of orange juice, 1 tbsp olive oil and salt in a large bowl. Massage kale by scrunching small amounts with your clean hands, then releasing and repeating. (P and K)
Make the dressing by whisking remaining orange juice, orange zest, honey and pepper in a small bowl. Gradually whisk remaining ¼ cup olive oil into the juice mixture to combine well. Set aside. (P and K)
Pour the dressing over kale. Add strawberries, raisins and toasted almonds. Toss gently. Let salad ingredients marinate for 15 to 20 minutes before serving. If desired, top with feta cheese. (K)
We know it’s often tricky to get your children to try new flavors. But if you get creative with food for kids, you can help them discover that variety makes mealtimes fun – while ensuring they get the nutrition they need.
One approach is to make fruits and vegetables more appealing by presenting them in fun and creative ways. For example, you can create colorful fruit skewers with a variety of fruits like strawberries, grapes, and pineapple. Kids would then more likely give them a try.
Involving children in the preparation process can also increase their interest in trying new flavors. Let them choose a new fruit or vegetable to incorporate into a meal and have them help wash, chop, or cook it. This hands-on experience can make them feel more connected to the food and more willing to give it a taste.
Additionally, it's important to be a role model by regularly consuming fruits and vegetables yourself. Children often imitate the behaviors they see and may be more inclined to do the same.
