  1. Using a spiralizer, create zoodles out of the zucchini (K)

  1. Add the zoodles to a large bowl, toss with olive oil and season with pepper. Let marinate 15 minutes (K and P)

  2. Add tomatoes, mozzarella, corn and basil to the zoodles and toss until combined (K and P)

  3. Drizzle with croutons and balsamic, and serve (K)
