  1. Preheat oven to 170 degrees Celsius. P

  1. Cut each zucchini in half lengthwise and, using a tsp, remove most of the flesh & chop them. P and K

  2. Place the zucchini shells on a baking sheet and sprinkle with pepper. Bake until just tender, 8 to 10 minutes. P and K

  3. Meanwhile, heat oil in a pan (medium heat). Add the flesh, onion and garlic; cook until the onion starts to soften, 3 to 4 minutes. P and K

  4. Stir in tomatoes and the paste; cook for another 2 more minutes. P and K

  5. Divide the zucchini mixture evenly among the zucchini shells. Top evenly with olives and sprinkle with mozzarella. K

  6. Broil the zucchini boats until the cheese is browned, about 5 minutes. Top with basil. P and K
