  1. Preheat oven to 170 degrees Celsius. (P)

  1. Cut each zucchini in half lengthwise and, using a tsp, remove most of the flesh & chop them. (P and K)

  2. Place the zucchini shells on a baking sheet and sprinkle with pepper. Bake until just tender, 8 to 10 minutes. (P and K)

  3. Meanwhile, heat oil in a pan (medium heat). Add the flesh, onion and garlic; cook until the onion starts to soften, 3 to 4 minutes. (P and K)

  4. Stir in tomatoes and the paste; cook for another 2 more minutes. (P and K)

  5. Divide the zucchini mixture evenly among the zucchini shells. Top evenly with olives and sprinkle with mozzarella. (K)

  6. Broil the zucchini boats until the cheese is browned, about 5 minutes. Top with basil. (P and K)
