  1. Boil potatoes, green beans and eggs. (P)

  1. When green beans are crisp-tender, drain and drop into ice water to cool and then drain again. (P)

  2. Toss the tomatoes in a small bowl with pepper to taste. Add about 1/4 cup dressing to the potatoes and toss. (K)

  3. Quarter the hard-cooked eggs. (K)

  4. Divide the lettuce into 2 plates. Arrange the potatoes, green beans, cooked eggs and tuna on top, then add the tomatoes and the carrots to the plates. Drizzle with oil and red vinegar dressing. (K)
